Baked Chicken and Roasted Veggies:Ingredients:
salt and pepper
Preheat over to 400 degrees
place chicken breasts in shallow oven safe dish and add either a little water or chicken broth to them. salt,pepper, season to liking. (Dry herbs are a nice addition as well)
Cover with foil and bake for 35 mins, for the last five mins, remove foil and bake for remaining time.
TIP: use a thermometer to ensure middle of chicken reaches a temp of 165 degrees to ensure it is cooked properly.
Slice up all to bite size appropriate pieces
Toss in olive oil, salt and pepper
place on a foil covered baking sheet
Oven must be at 450 degrees, so increase temp toward the end of the chicken being done
Bake veggies for about 18-20 mins, they will look soft and charred in some places.
After removing them from oven, can add some dry herbs and a little bit of lemon juice (if available/desired)
Serve with chicken and enjoy!
