Chicken, rice, and veggies.

Cooking chicken:

Preheat oven to 400 degrees.

Place chicken breasts in shallow glass dish, add a little water, salt/pepper and cover with foil. Bake 35 mins. Uncover and back for additional 5 mins. At this point can add bbq sauce (if desired) make sure chicken reaches internal temp of 165 degrees

Rice or quinoa

– follow package directions

Squash/assorted veggies-

Slice veggies and in a pan on stove heat up some olive oil on medium. Toss in sliced veggies and sauté. Stir throughout and cook until veggies are lightly golden. (About 4-5 mins)
