- 1/4 cup olive oil
- 5 potatoes, sliced
- 1-2 lrg bell peppers, sliced into rings
- 1 lrg onion, peeled and chopped
- Salt n pepper to taste
- 5 chicken breasts
Preheat over to 400 degrees
Place chicken breasts in shallow pan (or two if needed) add a couple splashes of chicken broth or water if not available.
Season accordingly to liking and cover with foil. (Keeping foil on for majority of the time ensures your chicken won’t dry out!)
Bake for 35-40 mins
Remove foil for last 5 mins and take a spoon and splash some of the broth in the dish over the chicken.
While chicken is baking:
Heat oil in a large frying pan on medium-high heat. Fry the potatoes for five minutes hen add the onion and peppers. Season with salt and pepper. Cool for at least 15 minutes turning potatoes frequently until they become mushy.
