1 1/2 cup quinoa
3 cups water
5 cups shredded cabbage
1 cup chopped carrots
1/2 onion chopped
Place quinoa and water in a medium pot, bring to boil, reduce heat, and cover.
Let cook for 15-20 mins or until water had been completely absorbed.
While quinoa is cooking, in a pan, heat oil and place carrots, onion, in pan and sauté until veggies are slightly tender. Add in cabbage and continue to sauté until cabbage has cooked through and wilted slightly. Once veggies are ready, stir in quinoa and serve right away.
If available in your home, soy sauce and rice vinegar would be an excellent addition to this meal for an eastern twist. You can add it to the cooked veggies and let them sauté a little longer in pan with the soy sauce/rice vinegar before adding quinoa.
