Quinoa quiche muffins

(makes 6 muffins, can easily dbl water, quinoa, eggs, and cheese to make 12 smaller muffins)

Ingredients :
1 cup water
1/2 cup quinoa
2 tablespoons olive oil
1 onion, thinly sliced
4 eggs
4 cups spinach
1 cup cheddar cheese
Salt/pepper to taste

Instructions:
1. Preheat oven 375
2. Line or spray muffin tins
3. Combine water, quinoa, in a small saucepan and bring to boil, lower to sled, co Ed and continue to cook for 15 mins
4. In large frying pan, cook sliced onion until translucent (about 3-4 mins)
5. Stir in spinach, Season with salt/pepper and continue to cook until spinach is wilted
6. Remove from heat, let cool
7. Combine quinoa, spinach mixture, and cheese
Make sure quinoa mixture is not hot, let it cool down before pouring in beaten eggs and mix well together
Divide batter evenly in muffin tins
Bake from 35-40 mins or until top is golden brown
Remove from heat and cool on rack for 5 mins
Serve and enjoy!
