Ingredients:1-2 butternut squash, peeled, seeded, and cut into cubes
2 tablespoons and 1-1/2 teaspoons olive oil
Salt and pepper to taste
*Note: Minced Fresh Garlic would be an excellent addition to this! (Approximately 2 cloves)
Preheat oven to 400
Toss butternut squash and olive oil (and garlic) in a large bowl, season with salt and pepper. Arrange on a baking sheet with a sheet of foil.
Roast in oven until squash is tender, lightly browned (25-30 mins)
Preheat over to 400 degrees
Place chicken breasts in shallow pan (or two if needed) add a couple splashes of chicken broth or water if not available.
Season accordingly to liking and cover with foil. (Keeping foil on for majority of the time ensures your chicken won’t dry out!)
Bake for 35-40 mins
Remove foil for last 5 mins and take a spoon and splash some of the broth in the dish over the chicken.
