Summer sauté with squash, corn , and chicken

Ingredients:Corn, sliced off the Cobb

Squash, sliced 

Onion, diced

Salt, pepper

Olive oil

Chicken breasts

Excellent addition: chopped fresh parsley and garlic
Directions: 

Preheat oven to 400 degrees. Place chicken breasts in shallow glass dish, add a little water or chicken broth, cover with foil. And bake for 30 mins, flipping over, removing foil and baking for another 15 mins. Ensuring internal temps reach 165 degrees.

During the chickens last 15 mins, medium heat a pan on stove with olive oil. Toss in onion, after a min or two, toss in squash and cook for a few mins, constantly stirring. Once squash begins to golden, toss in corn and add salt, pepper, and garlic (if you have it)

Serve together, dice chicken up (if preferred) a splash of balsamic vinegar would zest this meal up!
