Roasted Butternut Squash

Ingredients:1-2 butternut squash, peeled, seeded, and cut into cubes 2 tablespoons and 1-1/2 teaspoons olive oil Salt and pepper to taste *Note: Minced Fresh Garlic would be an excellent addition to this! (Approximately 2 cloves) Directions: Preheat oven to 400 Toss butternut squash and olive oil (and garlic) in a large bowl, season with salt
