Recipe Directions for Roasted Vegetables – Potato, zucchini, and broccoliPlace potato, zucchini, and broccoli in baking dish
Sprinkle Parmesan cheese and olive oil over vegetables (Cheese optional)
Season with salt and pepper
Bake on 375 for 30 minutes on a pan covered with foil
Rice: Follow directions on package
Chicken instructions:
Preheat over to 400 degrees
Place chicken breasts in shallow pan (or two if needed) add a couple splashes of chicken broth or water if not available.
Season accordingly to liking and cover with foil. (Keeping foil on for majority of the time ensures your chicken won’t dry out!)
Bake for 35-40 mins
Remove foil for last 5 mins and take a spoon and splash some of the broth in the dish over the chicken
