Chicken and quinoa with roasted carrots:


5 chicken breasts
Whole carrots (enough for a family of 5)

Roasted Carrots:

Preheat the oven to 425 degrees. Line a baking sheet with aluminum foil.
Slice the carrots diagonal about 1-½” thick. Make sure all pieces are approximately the same size to ensure even cooking.
Combine the carrots, olive oil, salt, pepper and in a large bowl and toss well.
Roast in oven for approx 20 mins. Carrots with have blackend parts.

Oven Roasted Chicken:

Preheat oven to 400 degrees
line chicken breasts in glass dish
add a splash of chicken broth or water
cover with foil, bake for 25 mins.
remove foil and bake for an additional 20 mins ensuring chicken reaches an internal temp of 165 degrees
melted butter, rosemary, and/or olive oil would be an excellent addition to this meal if available to you! Fresh squeezed lemon would also be yummy over chicken/quinoa
