Breakfast Burrito

  • 1 pkg of Tortillas (whole wheat preferred)
  • 1 carton of Eggs
  • 2 Potatoes (can vary depending on size)
  • 1 Small bag of Shredded Cheese
  • Loose leaf Spinach (1 sm bag)
  • 1 Onion
    Cooking Directions:
  • Preheat oven to 450 degrees
    Dice up potatoes and onions
    Salt/pepper to liking and toss in olive oil or vegetable oil (whatever is available in your home)
    Cover cooking sheet in foil and add potatoes/onions
    Cook for 35 mins checking on potatoes, and tossing them around the 20 min mark.
    **Cooking times may vary depending on the amount of potatoes you have.
    Cook to your liking.
    Cooking Eggs:
    Scramble the amount of eggs necessary for your family size.
    Typical is 2 eggs per burrito.
    (Cracking in a bowl, adding a little milk or water to help whip them up before placing in oiled pan on stove)
    Warm up tortillas on foil in oven for just a min or two
    Add eggs, potatoes/onions, spinach, and cheese and roll up!
