Brown Rice and Greens salad
Ingredients:1 1/2 cup brown rice
3 cups water
5 cups shredded cabbage OR mixed greens
1 cup chopped carrots
1/2 onion chopped
Put brown rice and water together in a pot with a lid. Use the ratio of 1.5 cups water to 1 cup rice.
Set the heat to maximum, and bring the rice/water to a boil uncovered.
Turn off the heat, and let the rice sit in the covered pot for another 10 minutes.
While rice is cooking, in a pan, heat oil and place carrots, onion, in pan and sauté until veggies are slightly tender. Add in mixed greens (after a quick rinse in the sink) and continue to sauté until cabbage has cooked through and wilted slightly. Once veggies are ready, stir in brown rice and serve right away.
If available in your home, other veggies such as bell pepper or broccoli would be an excellent addition as well as soy sauce and rice vinegar to this meal for an eastern twist. You can add it to the cooked veggies and let them sauté a little longer in pan with the soy sauce/rice vinegar before adding brown rice.
